METHOD:
Preheat the grill. Marinate chicken thighs in the olive oil, garlic, and thyme.
In a bowl, combine the vegetables with the mint, scallions, cilantro and dressing.
Grill chicken until done.
Place salad on the center of each plate. Garnish with pickled ginger. Slice the chicken thighs and fan around the salad. Sprinkle with the noodles.
Round Out the Meal:
With a bowl of miso soup.
