Orzo with Clams, Zucchini and Lemon

Ingredients

  • 1 box (16 ounces) orzo (rice-shape pasta)
  • 2 medium zucchini, cut in thin 1-inch-long sticks
  • 1 can (10 3/4 ounces) condensed cream of celery soup
  • 1 cup water
  • 1/2 cup milk
  • 6 1/2 ounces each) minced clams, drained
  • 2 tablespoons fresh lemon juice
  • 1/2 cup freshly grated Parmesan cheese
  • Freshly ground black pepper to taste

Cooking Instructions

Bring a large saucepan of lightly salted water to a boil. Add orzo and cook, stirring occasionally, 4 minutes. Stir in zucchini and cook 3 minutes or until zucchini and orzo are tender. Drain in a colander; return to pot.

Meanwhile whisk soup, water and milk in a medium saucepan until blended. Bring to a boil. Stir in clams and lemon juice and heat through. Pour over pasta and mix well. Sprinkle with cheese and pepper; stir to mix and coat. Serve in shallow bowls.
