Oxtail Stew

Ingredients

  • 2 pkgs Beef Oxtails
  • 1/2 cup vegetable oil
  • 1 whole onion/chopped
  • 1/2 bell pepper/chopped
  • 1 clove garlic/chopped
  • 1 tb salt
  • 1 tb black pepper
  • 1 tsp accent
  • 1 can stewed tomatoes/original
  • 2 lrg irish potatoes/sliced chunky
  • 2 cups water

Cooking Instructions

Season meat. Heat oil in skillet for braising meat.Place meat in hot oil and brown on all sides. Remove meat and reduce oil to 3 tbs...add onion and bell pepper/cook 2 minutes and add garlic. When garlic begins to brown add meat, stewed tomatoes and 2 cups of water. Make sure meat is covered. Bring to a rolling boil, reduce heat and cover. Cook for 1hr and 45 min then add potatoes. Recover and cook until potatoes are soft. Serve over rice with vegetables.
