Oyster Stew

Ingredients

  • 3 c. milk
  • 1 slice onion
  • 2 ribs celery
  • 2 sprigs parsley
  • 1/4 bay leaf
  • 2/3 c. cream
  • 1/4 c. cracker crumbs
  • 1 pt. oysters
  • 3 T. butter
  • salt to taste
  • pepper to taste

Cooking Instructions

Heat milk, onion, celery, parsley, and bay leaf over boiling water for 20 min. Remove vegetables and bay leaf and add cream and cracker crumbs. Meanwhile, heat oysters in their own liquor until edges curl. Combine with milk and cream mixture; add butter, salt and pepper. Serve at once.

Recipe Notes

Years ago I made an oyster stew even though I didn't know how! I was told, "You can't ruin oyster stew!"
