Oysters With Pink Butter

Ingredients

  • 12 oysters in the shell
  • 1 tbsp minced shallots
  • 9 tbsp cold unsalted butter
  • 1 tbsp red wine vinegar
  • 5 tbsp red wine
  • Coarse kosher salt and freshly ground black pepper to taste
  • 1 bunch of fresh chives, cut into 1/4-inch lengths

Cooking Instructions

Prepare a grill or preheat the oven to 500F.

Place the oysters on the hot grill or on a baking sheet in the oven until they just begin to open. Open completely with a knife and remove the top shell.

While the oysters are opening, saute the shallots in 1 tbsp of the butter for about 30 seconds. Add the vinegar and wine and reduce the liquid by two thirds. Remove from the fire and whisk small pieces of the remaining cold butter into the remaining liquid, one piece at a time, until all is incorporated and the mixture is creamy.

Add salt, pepper, and chives and spoon over the warm oysters.
