Ingredients

  • Puff Paste
  • 1/2 cup Vanilla Sugar or 1/2 cup sugar mixed with:
  • 1 tsp cinnamon, optional

Cooking Instructions

Roll into a 6 x 18-inch strip, 1/4 inch thick: Puff Paste, page 643

To sugar, fold and cut, see Palm Leaf Rolls [below], p. 611.

Sprinkle a board with: 1/2 cup Vanilla Sugar7

or a mixture of: 1/2 cup sugar

1 teaspoon cinnamon

Fold as sketched on the left below, bringing the ends to within about 3/4 inch of each other. Repeat this folding as shown in the right foreground and again as shown in the rear. Slice into 1/4-inch-thick "palm leaves".

Chill and bake as noted in puff paste recipe.
