METHOD:
Preheat oven to 400°F. Combine 1 Tablespoon ground cumin, 2 teaspoons ground coriander, paprika and kosher salt in a small bowl. Season lamb with the spice mixture, and set aside. Heat oil in a large, heavy, oven-proof skillet over medium heat. Sear lamb chops for three minutes on one side. Turn each chop and transfer skillet to the oven. Roast chops until medium rare, about 8 to 10 minutes. Remove pan from oven and let lamb rest for a few minutes before serving.
To make the mint-yogurt sauce, combine 1 teaspoon cumin, 1/2 teaspoon coriander, mint and yogurt. Add salt to taste and mix well.
Serve the lamb with the mint-yogurt sauce.
Round Out the Meal:
With braised turnips or spinach.
Kid Friendly:
Limit spice to one pinch of each.
