Cook the pasta in a large pot of boiling salted water until it is al dente. Drain, rinse under cold water, and set aside.
In a small skillet set over medium heat, toast the pine nuts until they are light brown (watch the heat, since it is easy to burn pine nuts). Set aside.
In a large serving bowl, combine the cooked pasta, toasted pine nuts, spinach, tomatoes, and olive oil. Add salt and pepper to taste. Add the goat cheese. Toss to combine. Serve on chilled salad plates.
