Pasta with Escarole and Beans

Ingredients

  • 4 cans White Cannelli beans
  • 1 head escarole chopped sm. pieces
  • 1 stick pepperoni par-boiled chopped
  • 1 quart chicken broth
  • 1/4 cup roasted garlic
  • 6 stalks celery (middle part) chopped
  • 2 tsp salt & pepper
  • 4 tlbsp sherry
  • 4 tlbsp butter
  • 3 tblsp olive oil
  • 1/2 cup onion

Cooking Instructions

put oil in big pot and add all the garlic chopped onion celery salt pepper and sautee. add the butter and turn up the heat let it all come to a simmer and add sherry. Lower the heat and add two cans of beans and chicken stock. take a hand blender and blend everything together. let it simmering and then add the escarole, the boiled and chopped pepperoni and the additonal two cans of beans (whole). let that cook for another ten minutes or until it is hot. add your favorite little pasta and garlic bread and add stock if you think it needs it. This is a healthy meal!
