1. In a food processor, using the steel blade, place the flour and salt. Add the eggs, water, and oil and process until dough begins to form a ball.
2. Remove from work bowl and wrap securely in plastic wrap. Use as needed. (If using the dough within 2 hours, let it rest unrefrigerated. For best results, pasta should be used within 24 hours.)
3. Divide into four pieces and knead through a pasta machine as per manufacturer's directions, keeping unused portions wrapped.
4. Cut as desired. Once you have cut the pasta to the desired form, it will stay the freshest if you freeze it.
