Ingredients

  • 1/4 lb plus 4 tbsp butter
  • 1 egg yolk
  • 3 tbsp dry white wine or sherry
  • 1/4 cup sugar
  • Pinch of salt
  • 2-1/2 cups flour

Cooking Instructions

1 Place the flour, salt and sugar in a bowl. Blend in the butter with the fingertips or with a pastry blender until the mixture resembles coarse oatmeal.

2 Add the egg yolk, wine and enough cold water to gather the mixture into a ball. Chill the dough for 30 minutes to make it easier to handle.

3 Roll out two thirds of the dough on a lightly floured pastry cloth or board. Line a 10-inch pie plate. Roll out remaining dough to 1/8-inch thickness and cut with a pastry wheel into long strips 1/2 inch wide.
