Peel and pit the peaches and slice into eighths. Distribute the slices evenly among four tall 12-ounce glasses. Add 2 tablespoons of the nectar to each glass and mash peaches lightly with a fork.
Add 1 scoop of ice cream to each glass, add the soda water or seltzer, and stir lightly to mix. Top with a dollop of flavored whipped cream and serve.
