Ingredients

  • 1/4 cup roasted peanut oil
  • 2-1/2 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp soy sauce
  • 1 garlic clove, finely minced
  • 1/2 to 1 serrano chile, diced
  • 2 scallions, including an inch of the greens, thinly sliced
  • 8 mint leaves, finely chopped
  • 2 tbsp chopped basil, preferably Thai or anise basil
  • 2 tbsp chopped cilantro
  • Pinch salt

Cooking Instructions

Combine everything in a bowl and whisk together. Taste-the soy sauce may provide enough salt; if not, add some.
