1. Shell peas (yield should be about 1-2/3 cups).
2. In 2-quart saucepan over medium heat, in 1 inch boiling water, heat peas and 1 teaspoon salt to boiling. Reduce heat to low; cover pan and simmer 5 minutes; drain.
3. In 10-inch skillet over medium heat, fry bacon and onion until light brown. Add peas, almonds and salt to taste; heat through. Stir in cream. Serve in individual dishes.
SNOW PEAS
Snow peas, also known as Chinese peas, are in season from May to September. Look for delicate fresh green, thin pea pods. Refrigerate and use within a day or two. To prepare, just rinse in cold water, carefully stem and string the pods (do not shell). Cook as for ordinary peas and eat pod and all, as a cooked vegetable or in recipes for Chinese dishes.
