Penne alfredo with salmon and peas

Ingredients

  • 3/4 box Whole grain penne
  • . 8 oz jar Reduced fat alfredo sauce
  • small filet salmon cut into serving portions and sauteed
  • 2 T dried basil
  • cup frozen green peas
  • cup grated Parmesan cheese
  • 2 whole plum tomatoes diced.

Cooking Instructions

Bring pot of water to a boil for penne. (Follow box instructions) Cook penne until al dente. Drain and set aside.

Combine alfredo sauce and dried basil in saucepan; Simmer until warmed. Add green peas when sauce has warmed. Bring again to simmer.

Spray olive oil spray into large skillet; saute serving sized-pieces of salmon filet salting and peppering each side. Takes 3 minutes per side. Reserve for top of pasta when serving..

Place drained pasta in the large skillet used to cook the salmon. Add sauce with peas and basil to pan. Again simmer until heated through. Remove to platter.

Top with diced plum tomatoes and Parmesan cheese. Place sauteed salmon fillets across top. Makes four generous servings..

Recipe Notes

Substitute sauteed chicken breasts for salmon or 1 can of salmon, adding it to the sauce and warming it; eliminate fresh salmon if using canned. Combine sauce with pasta and garnish with parmesan and diced fresh plum tomatoes. Good pantry meal.
