Penne w spinach and feta cheese

Ingredients

  • 1 1/2 1lb 1 1/2 lbs plum tomatoes
  • 1box frozen chopped spinach
  • 1/2 lb good feta cheese
  • 1 small onion chopped
  • 1/3 cup olive oil

Cooking Instructions

In a 2 quart pot saute onion till translucant , slice tomatoes in half remove most of the seeds and dice add into onions cook till soft add salt and pepper to taste add defrosted spinach squeese out most of the water. Boil pasta till aldente. Drain save a cup of pasta water. When pasta is done add broken up feta to the tomates and spinach add pasta and some more oil if you like add a little pasta water if you like . serve with crusty bread and a salad.

Yummy!

My boyfriend doesn't like tomatoes, but he loved this recipe. I used an enriched pasta, which made it that much healthier and I didn't have to worry about the carbs.

Really good and easy

I loved it. The only thing I did different was added the Whole tomatoes in a can I even added a little bit of the sause in it. Thanks for the quick and easy. : )
