Coook Pasta in lightly salted water with a little Olive oil to prevent sticking, drain and reserve.
Brown sausage in separate pan, slice and reserve.
In a shallow pot with lid, sautee Onion in some Olive oil until transparent, add chopped Garlic and sautee together about 5 minutes. Do not allow Garlic to brown and do not cover.
Add dissolved Chicken bullion to Onions and Garlic, bring to simmer on medium heat.
Add washed Escarole to Onion, Garlic, Bullion and cover. Simmer until Escarole steams and wilts down but remains green.
Add chopped Plum tomatoes with juices and sliced Sausage to Escarole, mix and cover. Simmer for about 20 mins.
Place cooked Penne into a deep, oval shaped serving platter. Pour Escarole, Sausage mixture over the Penne and serve family style with some Garlic bread and a Mixed Garden salad. Buon Appetit'
