Roast Chicken Breast with Coconut Milk, Cremini Mushrooms, and Green Olives

Ingredients

  • 2 1/2 pound to 3 chicken breast, skinless
  • Salt and pepper
  • 3 quarts coconut milk
  • 1 pound cremini mushrooms, diced
  • 1 pound green olives with pimiento
  • 2 tablespoon ground black pepper
  • 1 1/2 cup jasmine rice

Cooking Instructions

METHOD:

Preheat oven to 375°F. Season the chicken with salt and pepper. Place in a baking dish with coconut milk, mushrooms, olives, and ground black pepper. Cover with foil and roast in the oven for 25 minutes.

Meanwhile, rinse the rice in cold water 4 to 5 times, until water runs clear. Place rice in a sauce pot with 3 cups water and bring to a boil. Reduce to low, cover, and let simmer for 20 minutes.

Serve chicken with rice.

Round Out the Meal:

With sauteed Chinese broccoli.

Kid Friendly:

Omit the olives and substitute white button mushrooms for the cremini mushrooms.

i sometimes wonder if black people have different tastebuds. This was horrible!!!! i saw another recipe that only seasoned the chicken with salt and pepper. this is not tasty enough for me. I will stick to carribean food and italian food. at least they uses spices

you gotta be kidding!

Most of the recipes featured on AOL are among the worst I've ever come across, and that's saying a lot! As a cook, I've come to realize most "chef" are merely celebreties, not particularly good cooks. Elitist, snobs, for the most part. This pizza recipe is a perfect example of bad cooking being passed off as "gourmet" chef cooking. AOL....GET REAL!
