Heat oven to 425°F. Coat a baking sheet with nonstick spray.
Unroll pizza crust on a cutting board, and stretch dough into a 12-in. square. Cut in quarters (you’ll have four 6-in. squares).
For each calzone: Sprinkle 2 Tbsp shredded cheese on right half of square, leaving a 1/2-in. border on top, bottom and right side. Top with 8 slices pepperoni, 1/4 cup ricotta, another 2 Tbsp shredded cheese and 1/4 cup pepper mixture.
Fold left side of dough over filling; press edges together to seal. Place on prepared baking sheet; poke 4 slits in top with sharp knife to let steam escape.
Bake 10 to 12 minutes until golden.
