Bring a large pot of water to a boil. As it comes to a boil add to large pinches of salt to the water and then add the penne. Cook to al dente.
As pasta cooks, mince the garlic, slice the onions, clean and slice the mushrooms.
Add 2 Tablespoons of oil to a large saute pan. As the oil comes to a shimmer. Add the sausage by squeezing it out of the casings and into the pan.
Brown the sausage, crumbling it with the back of a spoon as you cook it ( wooden if you have a nonstick pan). Once cooked, remove and drain on paper towels.
Add the rest of the oil to the pan and add the sliced mushrooms, onione and garlic. Add a pinch of salt to the mixture. Cook for 5 minutes until the onions have started to brown. Deglaze the pan with the sherry and add the red pepper flakes, pesto and chicken stock.
Put back in the sausage that has drained and toss completely with the pesto sauce.
Drain the pasta and place back in the pot it was cooked in. Pour in the Pesto and Sausage from the pan into the pot and toss. Put into 4 bowls, top with grated cheese and serve.
