Crush or grind both kinds of peppercorns coarsely and press into salmon on both sides. Salt lightly. Heat a wok or heavy cast-iron skillet over high heat until smoking. Add oil and then salmon. Sear salmon on both sides, lower heat, then add sherry carefully because it will flame. Cooking time depends on thickness of steak or fillet. If salmon is less than an inch thick, cook it less than 2 to 3 minutes a side.
