Ingredients

  • 1 cup of uncooked rice
  • Stock, broth or bouillon (about 2 cups)
  • 4 tbsp of butter
  • 1 small onion, finely chopped

Cooking Instructions

Wash the rice thoroughly in a pan of cold water. Pour off the water and repeat. Continue washing in fresh water until the water runs clear and not cloudy. This is to rid the rice of excess starch. Four washings should be ample. Drain. Brown the onion lightly in the butter and add the rice. Cook it in the butter over low heat for about 4 to 5 minutes, stirring it often to let it brown evenly. It should be just lightly colored. Heat the liquid to the boiling point and pour it over the rice until it is a good 1-1/2 inches above. Cover the pan tightly and bake in a 350F oven for 25 to 30 minutes, or until all the liquid is absorbed. Serve with plenty of butter.
