Pineapple-Angel Food Cake

Ingredients

  • 1 can (8 oz) pineapple chunks in juice
  • 1 6.2 oz Angel Food Cake mix
  • 3 Tblsps. Shredded coconut
  • 3/4 cup seedless raspberry ALL FRUIT spread
  • 2 Tblsps. Raspberry Liqueur (or lemon juice)

Cooking Instructions

Preheat oven to 350 degrees. Drain pineapple. Reserve juice. Prepare cake mix, omit water, add 6 T. pineapple juice to mix, beat as directed. Fold in coconut and pineapple chunks. Pour into 4 1/2" x 8 1/2" loaf pan. Bake 25-30 min. at 350 degrees. Combine fruit and liqueur (or juice), serve as sauce with cake.

May also serve with strawberries, blueberries, and whipped cream. (Red, white, and blue for July 4th!)
