Ingredients

  • 1-1/3 cups unbleached all-purpose flour
  • 1/2 cup butter, softened
  • 2 tbsp pineapple juice
  • 1 cup canned crushed pineapple, drained
  • 1/4 cup maple syrup granules or granulated brown sugar
  • 2/3 cup liquid egg substitute
  • 1/2 tsp baking powder
  • 1/2 cup chopped macadamia nuts

Cooking Instructions

Preheat oven to 350F. Spray a 9-inch-round cake pan with vegetable oil spray. In a medium bowl, combine flour, butter, and pineapple juice with a pastry blender until thoroughly blended. Press mixture onto bottom of prepared pan to make a crust. Bake 20 minutes and remove from oven.

While crust is baking, stir together pineapple, maple syrup granules, egg substitute, baking powder, and nuts until combined. Pour over crust. Bake 25 minutes. Cool in pan 10 minutes and cut into wedges.
