Pineapple-Macadamia Cobbler

Ingredients

  • Filling:
  • 3/4 cup sugar
  • 1/4 cup buttermilk baking mix
  • 4 cups bite-size pieces fresh pineapple (from a 31/4-pound pineapple)
  • 1 teaspoon freshly grated lemon peel
  • Topping:
  • 1 large egg
  • 2/3 cup sugar
  • 1/2 stick (1/4 cup) butter or margarine, melted
  • 3/4 cup buttermilk baking mix
  • 1/2 cup sweetened flaked coconut, toasted (to toast, follow directions on bag)
  • 1/2 cup coarsely chopped macadamia nuts

Cooking Instructions

Heat oven to 350°F. Grease an 8-inch square baking dish.

Filling: Mix sugar and baking mix in a large bowl. Add pineapple and lemon peel and toss to mix and coat. Scrape into prepared baking dish.

Topping: Whisk egg, sugar and butter until blended and smooth. Stir in baking mix and 1/4 cup of the coconut. Spread over filling to cover completely. Sprinkle

with remaining coconut and the macadamia nuts.

Bake 40 to 45 minutes until puffed and golden.

Serve warm with whipped cream.
