Piquant Fish Steaks

Ingredients

  • 2 lbs fish steaks (cod, flounder, halibut, swordfish) 1/2 - 3/4-inch (1 cm) thick (1 kg)
  • 1/2 cup vegetable oil (125 ml)
  • 1/4 cup lemon juice (50 ml)
  • 1/2 tsp salt (2 ml)
  • 1/4 tsp white pepper (1 ml)
  • 1 tbsp chopped parsley (15 ml)
  • 1/2 tsp dry mustard (2 ml)
  • 1 tsp dried chervil (5 ml)

Cooking Instructions

Lay the steaks in a shallow pan.

Mix together the remaining ingredients for the marinade. Pour over the fish, coating evenly.

Marinate in refrigerator for 2 hours. Drain, reserving the marinade.

Place steaks on the upper grill over medium heat, turning once and brushing with the reserved marinade.
