Planked Lamb Chops with Mint Gremolata..

Ingredients

  • 1/2 cup loosely packed mint leaves, finely chopped
  • zest of 1 lemon
  • 1 tablespoon lemon juice
  • 3 teaspoons minced garlic (about 2 small cloves)
  • 1 tablespoon olive oil
  • 2 racks of lamb (about 1 ½ pounds each), frenched

Cooking Instructions

FIRST Preheat grill to medium-high heat. Season lamb chops with kosher salt and pepper and set out at room temperature while preparing gremolata.

NEXT Combine gremolata ingredients in a small bowl, season with salt and pepper, and stir well. Set aside.

LAST Oil grill grates and grill lamb for 3-4 minutes on all sides until well browned and internal temperature registers 130°F for medium-rare. Remove from grill and let rest for 10 minutes before slicing. Serve lamb with gremolata spooned on top and served along side.
