1. In a large saucepan over low heat, combine the plums, apple juice, zests, vanilla bean, cloves, and cinnamon. Stir in the sugar and lemon juice and simmer for 20 minutes, until the plums are cooked. Remove the plums with a slotted spoon and set aside.
2. Reduce the juices by half, to about 2 cups. Place the plums in a 1-quart jar. Pour the juice and spices over the plums, cool to room temperature, cover, and refrigerate for several days. Remove the vanilla bean, cloves, and cinnamon. Serve over waffles or angel food cake.
