Heat butter and olive oil in skillet (cast iron works best!). Add chopped onions and saute until they just start to get translucent. Add garlic and saute for 1 minute. Remove onion and garlic from skillet to a small bowl and place chops in skillet Brown well on both sides. Add more butter and olive oil if necessary. When meat is browned, return onion and garlic to skillet and reduce heat. your hands to smash the whole tomatoes or place in a food processor and pulse until broken down. Mix tomatoes with tomato sauce worcstershire sauce, spices and sugar. Pour slowly over chops in skillet. Cover skillet tightly and reduce heat. Cook for at least one hour to one hour and a half. Chops should be very tender and the sauce should be fairly thick. My family likes this with mashed potatoes to put the 'red sauce' on, but it is also very good with saffron rice or with buttered noodles.
This is something I threw together one night and my family raved about it. For variety, you could also add green and yellow peppers, summer squash, spinich etc. It's the meat that really adds the flavor to the sauce. I try to buy chops with a fair
