Pork Tenderloin with Couscous and Zucchini

Ingredients

  • 1 lb pork tenderloin, dried with paper towels if moist
  • 4 tsp vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 medium zucchini (about 6 oz each), halved lengthwise, then crosswise
  • 1 box (6.1 oz) tomato-lentil flavor couscous

Cooking Instructions

Heat barbecue grill or a ridged grill pan to medium. Rub pork with 2 tsp oil, then sprinkle with 1/4 tsp salt and 1/8 tsp pepper. Toss zucchini with remaining 2 tsp oil, 1/4 tsp salt and 1/8 tsp pepper.

Grill pork and zucchini: Pork 17 to 20 minutes, turning meat to brown all sides, until an instant-read thermometer inserted in center registers 155°F to 160°F; zucchini 3 to 5 minutes per side until charred and tender.

Remove meat to a cutting board and cover loosely with foil while preparing the couscous as directed on the box.

To serve: Cut pork crosswise in thin slices. Serve with couscous and zucchini.
