Pork Tenderloin with Couscous and Zucchini

Ingredients

  • 1 -lb pork tenderloin, dried with paper towels if moist
  • 4 tsp oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 medium (about 6 oz each) zucchini, halved lengthwise, then crosswise
  • 1 box (6.1 oz) tomato-lentil couscous mix

Cooking Instructions

Heat barbecue grill or a stovetop ridged grill pan to medium. Rub pork with 2 tsp oil, then sprinkle with 1⁄4 tsp salt and 1⁄8 tsp pepper. Toss zucchini with remaining 2 tsp oil, 1⁄4 tsp salt and 1⁄8 tsp pepper.

Grill pork and zucchini: pork 17 to 20 minutes, turning meat to brown all sides, until an instant-read thermometer inserted in center registers 155°F to 160°F; zucchini 3 to 5 minutes per side until charred and tender.

Remove meat to a cutting board and cover loosely with foil; let rest while preparing couscous as box directs.

To serve: Cut pork crosswise in thin slices. Serve with the couscous and zucchini.
