Portuguese Clams and Sausage

Ingredients

  • 2 tsp olive or vegetable oil
  • 2 oz diced smoked beef sausage
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1 oz Canadian-style bacon, cut into matchstick pieces
  • 1/2 tsp minced hot chili pepper
  • 1/2 cup seeded and chopped drained canned Italian tomatoes
  • 1/4 cup dry white table wine
  • 1/4 cup water
  • Dash pepper
  • 1 dozen littleneck clams, scrubbed
  • 1 tsp chopped fresh Italian (flat-leaf) parsley

Cooking Instructions

In 12-inch nonstick skillet heat oil; add sausage and cook over medium-high heat, turning occasionally, until sausage is browned, 1 to 2 minutes. Transfer sausage to plate and set aside.

In same skillet combine onion, bell peppers, bacon, and chili pepper and saute until vegetables are softened, about 1 minute; add remaining ingredients except clams and parsley and cook until flavors blend, 2 to 3 minutes. Add clams and reserved sausage to skillet; cover and cook until clam shells open, about 5 minutes. Transfer to serving dish and sprinkle with parsley.
