Put boiling water and then wash peel and cut the potatoes into chunks.
While waiting for the water to boil cook the bacon until it is crips and easily crumpled (unless using packaged bacon bits) until you have three cups.
When the water is boiling put the potatoes in and wait until tender. When the potatoes are tender drain them and mash. Add 1 cup of cheddar cheese and 1 cup of bacon to the potatoes.
Place the mixture into a casserole dish and spread evenly. Top it off with the rest of cheese and then bacon.
Put in the oven on 350 for about 28 minutes or until crisped at edgings and hot. Enjoy!
I prefer Jimmy Dean's Turkey Bacon 67% Less Fat, it has barely any fat on it and is never soggy. No one ever likes fatty bacon, well, no one I know of.

04/06/09 10:56 AM | pjtrboThis recipe is even better if you add about 4 oz. cream cheese and a 1/2 cup of sour cream to the mashed potatoes while mashing your potatoes. Also add a handful of chopped green onions to make this an even better dish. I bake it at 350 for 40 minutes. |
