Potato Kugel

Ingredients

  • 1 tsp salt or to taste
  • 1 tsp pepper or to taste
  • 5 - 6 tbsp vegetable oil or chicken fat
  • 4 eggs, lightly beaten
  • 1 cup grated onion, about 1 medium
  • 8 cups grated russet potato (peeled), about 4 large

Cooking Instructions

Brush a 9 x 13-inch glass baking dish with oil or spray generously with non-stick spray. Preheat oven to 350.

Peel potatoes and place in a bowl of cold water to prevent discoloration. Using a hand grater, coarsely grate potatoes and onions into a large mixing bowl.

Stir in eggs, salt, pepper, and oil. Mix well to coat potato shreds and stop discoloration. Work quickly.

Pour into prepared dish and bake for approximately 1 hour. Raise oven temperature to 450 and bake 5 to 10 minutes longer, or until top is browned.
