Grate the potatoes using a food processor. Add the grated potatoes to a large mixing bowl.
Next grate the onion with the food processor and add it to the potato mixture.
Taking the potato and onion mixture in your hands squeeze the mixture tightly to remove the excess moisture in the mix.
Return the squeezed mixture to the bowl and coat with the flour, add the egg, and the salt & pepper. Mix well.
In a large heavy non-stick skillet, heat the 1/4 cup of oil over medium heat.
Using your hands or spoon make pancakes using about 2 tablespoons of the mixture and add to the pan. Press down with a spatula and cook for 4 minutes. Flip and cook for another 2 minutes or until golden brown.
Serve your pancakes with sour cream and applesauce for a traditional presentation.
