Potato Ragout

Ingredients

  • 8 small Red Potatoes ~ Cut into 1" chunks (4ths or 6ths)
  • 2 Qt water ~ to cover potatoes
  • 1 dash Salt
  • 2 Tbsp Olive Oil
  • 2 Small Zucchini~ Cut into 1" chuncks
  • 2 Medium Onions ~ Cut into 1" chunks
  • 2 Bell Peppers ~ Cut into 1" chunks
  • 4 Med Roma Tomatoes ~ Cut into 1" chunks
  • 1 tsp Lemon Zest ~ approx 1/2 lemon peel
  • 2 Cloves Garlic ~ grated or minced

Cooking Instructions

Cut potatoes. Boil potatoes in water and salt until tender ~ approx 15 minutes

While potatoes are cooking: Cut onions & peppers & zucchini. Cut tomatoes. Grate lemon peel (zest) & garlic

Saute / Steam onions & peppers & zucchini in olive oil in a large covered pan until onions wilt ~ approx 12 minutes

Drain Potatoes & toss into buttered or pam'd casserole or 9x13x3 glass dish.

Add tomato pieces to onions & peppers & zucchini to warm them ~ approx 2-3 minutes.

Spoon vegetables into casserole with potatoes (reserving olive oil / juice from veggies). Toss gently.

Add Grated lemon zest and garlic to the olive oil. Drizzle over veggies.

Cover and bake 30 minutes in 350 degree oven til warm.

Recipe Notes

This is a perfect side-dish for a pork roast.
