1. As directed on page 266 - 67 [see below], steam or microwave the potatoes for 7 to 10 minutes or until they are very tender.
2. Heat 1 tbsp of the olive oil in a medium-size skillet and add the garlic. Stir over low heat for 2 to 3 minutes or until soft. Add the potatoes and turn them until they are well coated with the oil. Sprinkle the potatoes with the lemon juice and toss thoroughly, then drizzle with the remaining oil. Toss the mixture gently but thoroughly once more with the chives and season to your taste with salt and pepper before serving.
