Ingredients

  • 1/2 cup olive oil
  • 1 medium onion, sliced lengthwise
  • 2 garlic cloves, crushed
  • 16 medium Red Bliss potatoes, scrubbed and cut in half
  • 4 sprigs rosemary
  • salt to taste
  • pepper to taste

Cooking Instructions

Preheat an oven to 400F.

Saute the onion and garlic in the olive oil for several minutes. Add the remaining ingredients, coating everything with the oil. Place in the oven and roast for 30 minutes, or until the potatoes are tender.
