Ingredients

  • 3/4 lb raw, shelled shrimp or 1 lb prawns in shells
  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 2 cans (15-1/2 oz each) small white beans, drained and rinsed
  • 1 can (15-1/2 ounces) unsalted chopped tomatoes, not drained
  • 2 tbsp dried basil leaves or 1/2 cup chopped fresh basil
  • 1-1/2 tsp dried parsley or 2 tbsp chopped fresh parsley
  • 1/4 tsp pepper
  • 2 tsp freshly squeezed lemon juice

Cooking Instructions

Remove shells, if needed, from prawns and rinse in cold water. Heat olive oil in large skillet, add garlic, and saute until golden. Add shrimp or prawns and saute until almost cooked (not quite pink and opaque); add beans, undrained tomatoes, basil, parsley, and pepper. Cook for several minutes until heated and prawns are cooked. Stir in lemon juice. Serve hot.
