Start this whole process by seasoning your steaks with a Montreal steak seasoning and grill them to your liking. Remember that this is going to cook all day so rare to medium rare is recommended. Next cut the meat into cubes leaving the fat for flavor. Cube the potatoes. I prefer the skins on. Add the carrots large slices on the onion a bit of course ground pepper and add the gravy. The amount of gravy will vary with the actual amount of food. All of this is done in a 5qt slow cooker. If you are home,cook for 4 hours on high then turn to low until the potatoes are done. If you are working then low all day is fine. Serve this with fresh bread and butter and a huge glass of milk.
This is one I worked on for a while, and found that cheap cuts of rib eye steaks make the best. It has been a big hit at parties and pot lucks.
