Pudding and Pie Filling Mix

Ingredients

  • *PUDDING AND PIE-FILLING MIX (makes 4 1/4 c. mix):
  • 3 c. sugar
  • 2 c. cornstarch
  • 1/2; t. salt
  • VANILLA PUDDING:
  • 1 egg yolk
  • *1/2 c. pudding and pie-filling mix
  • 2 c. milk
  • 1 T. butter or margerine
  • 2 t. vanilla (or other extracts)
  • Mandarin orange segments (opt)

Cooking Instructions

PUDDING AND PIE-FILLING MIX: In a large bowl mix well all ingredients. Store in airtight container in cool, dry place. ( up to 4 mos.)

VANILLA PUDDING: In med. bowl stir egg yolk, set aside.

In med. saucepan combine mix and milk. Stir over med. heat until thick. Stir vigorously, add a third to yolk. Return to sauce pan. Cook and stir 1 min.

Remove from heat.

Stir in butter and vanilla until blended. Pour into custard cups.

Regrigerate until set. Garnish with orange sections.

Recipe Notes

VARIATIONS: Omit egg yolk and sub. ingredients indicated for vanilla. BUTTERSCOTCH: Sub. 1/4 c. butterscotch-flavored pieces. CHOCOLATE: 1/4 c. semisweet chocolate pieces. COFFEE: 1 T. dry instant coffee. RASPBERRY: 1/2 c. raspberry jam.
