11/15/07 09:00 AM | Pumpkin Pie Crust Problems? To Lilib36562--If it's your pie crust that is soggy--try prebaking the crust only at 350 degrees for 10 minutes making sure you cover the crust with aluminum foil and fill with pie weights or dried beans (about 2 lbs.). Remove from oven and remove foil and return for another 10 minutes. Cool and then fill. Bake at normal setting for pie. Another tip--if you notice your crust browning too soon, take an empty disposable aluminum pie pan and cut the bottom out and invert over pie while baking. It fits perfectly so as not to disturb filling and keeps your crust just the way you like it! |

Here's an easy, reliable way to ensure a moist and flavorful turkey...simply baste the turkey with chicken stock during roasting. When the turkey is done, use a bit more stock to make a quick and tasty gravy.
