PUNKIN BREAD PUDDING

Ingredients

  • 1 Tbsp unsalted butter
  • 1 lb brioche or challah loaf cut into 1 inches cubes (about 10 cups
  • 4 lrg eggs plus 2 large egg yolks
  • 2 c heavy cream
  • 2 c milk
  • 1 15 0z can punkin
  • 1 c pack brown sugar light
  • 1 Tbsp punkin pie spice
  • 2 tsp vanilla extract
  • 1/4 c dark rum
  • 1/4 tsp salt
  • confectioners sugar for dusting

Cooking Instructions

1.heat oven to 350 grease a 13x9x2 inch baking dish with butter.

2. bake bread cues in a roasting pan, tossing serval times 15 to 20 min or until bread feels dry and slightly firm. transfer cubes to a large bowl. turn off oven.

3. in another bowl, whisk eggs cream milk, pumkin puree, brown sugar punkin pie spiece, vanilla, rum and salt. Add bread cubes, tossing to coat. Pour mixture into prepareed baking dish. cover chill overnight.

4. heat oven to 350 place baking dish in a roasting pan to come hlfway up sides of dish. Bake 50 to 55 min or until the knife test cleans. Let cool in the pan on a wire rack until warm. Dust with powder sugar serve with vanilla rum custard sauce
