Punkin Cake Roll

Ingredients

  • 3/4 cup flour
  • 3 eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1 teaspoon baking powder
  • 1 teaspoon lemon juice
  • 1/2 teaspoon nutmeg
  • 2 teaspoons cinnamon / or pumpkin spice
  • 2/3 cup pumpkin
  • 1 cup chopped walnuts

Cooking Instructions

Beat eggs on high speed for 5 minutes, gradually beat in sugar. Stir in pumpkin and lemon juice. Stir together flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mixture. Spread into greased & floured 15 x 10 x1" pan. Top with chopped walnuts. Bake At 375* for 15 minutes. Turn out on towel and sprinkle with powder sugar. Start at narrow end , roll towel and cake up together...cool and unroll. Filling:

1 cup powdered sugar

8 oz cream cheese

4 table spoons margarine

1/2 teaspoon vanilla

Combine powered sugar, cream cheese, margarine and vanilla. Beat until smooth and spread over cake. Roll cake up and chill.
