Turn the oven to 375 degrees. Put a 9 inch pie pan into the oven while it pre-heats (this is key). When the oven has reached 375, remove the dish and add the cheese cubes. Bake until cheese just melts (10 minutes or so). Take the dish out and add the sliced poblano. Heat for another 5 minutes. I usually broil for a few minutes to make the top golden. Serve with chips and/or tortillas.
If you're so inclined, add some chorizo that has been sauteed with a little onion. Corn tortillas soften nicely in the microwave - put a stack between two moistened napkins on a plate for 40 seconds on high.
