Quick Beans and Rice

Ingredients

  • 11/2 cups uncooked long-grain white rice
  • 1/2 tablespoon vegetable oil
  • 1 large onion, chopped
  • 8 ounces chorizo, kielbasa or other smoked sausage, sliced 1/4 inch thick
  • 1 can (14 ounces) crushed tomatoes
  • 16 ounces each) small red beans or pinto beans, drained
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Cooking Instructions

Cook rice as directed on package.

Meanwhile heat oil in a large saucepan over medium-low heat. Add onion and sausage and cook, stirring occasionally, 6 minutes or until onion is soft. Stir in tomatoes, bring to a simmer and cook 5 minutes longer. Stir in beans, salt and pepper. Cook until heated through. Serve over rice.

Stumped for a side dish? Try sautéed kale, Swiss chard or spinach.
