Quick Cajun Gumbo

Ingredients

  • 3 T. vegetable oil
  • 1 med. onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 2 ribs celery, chopped
  • 2 cloves garlic
  • 1/2 lb. fresh okra, cut into thin slices
  • 3 T. all-purpose flour
  • 1/2 t. cayenne pepper, or to taste
  • 3 c. chicken stock or water
  • 1 lb. raw shrimp, peeled and deveined
  • 1 c. crab meat
  • 2 T. chopped fresh parsley
  • 1 T. gumbo file powder (optional)

Cooking Instructions

Heat the oil in a large skillet over moderate heat and saute the onion, bell pepper, celery, garlic, and okra for 10 min., stirring frequently.

Stir in flour and cayenne and cook 5 min..

Meanwhile, bring the stock to a boil in a large saucepan and add the shrimp and crabmeat.

Simmer until the shrimp are firm and opaque, about 5 min. Do not drain.

Stir the vegetable mixture into the shrimp mixture and bring to a boil, stirring constantly.

Reduce the heat and simmer 5 min.

Stir in the parsley and optional file powder immediately before serving.

Recipe Notes

Serve in bowl over white rice or cornbread.
