If using uncooked rice: add rice to pot along with 3/4 of the requested water needed. Also add the whole can of chili beans. (The liquid in the can makes up for the water left out). Cook rice as per directions.
If using left over or cooked rice: Empty your can of beans in pot and add the can of beans. Mix well and cook until heated through.
When rice & beans are finished, add half of the shredded cheese and mix thoroughly. Season with Salt & Pepper to taste.
Place servings of rice/bean/cheese mixture into bowls or serving dishes. Then add chopped tomatoes, extra cheese, onions, guacamole, sour cream, black olives and cilantro all to taste.
Serve with Tortilla chips.
This is a very quick, easy recipe that can be made by anyone and suited to everyone's tastes!
