Ramen Noodle Salad

Ingredients

  • 4 cups water
  • 2 packages chicken flavored ramen noodles
  • 2 tsp butter
  • 1/2 cup finely chopped celery
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced green (spring) onions
  • 4 Tbsp finely chopped green bell pepper
  • 2 tsp lemon juice
  • 2 tsp soy sauce
  • 4 Tbsp mayonnaise

Cooking Instructions

Bring water to a boil. Crumble noodles and add to water. Stir in seasoning packet. Return to boil and cook 2 minutes, stirring often. Drain noodles. Combine noodles and butter, stirring until butter melts. Add remaining ingredients, stiring gently to coat. Cover and chill 3-4 hours.

Recipe Notes

My aunt made this at a gathering and it is just a easy and good side dish that everyone will love. This recipe can easily be doubled and tripled.
