1 Soak the beans in water to cover overnight. Drain.
2 Place the beans in a large pot with the salt pork and water to cover. Cover the pot and simmer for 1/2 hour.
3 Add the vegetables and seasonings and cook until the beans are done, 1 to 1-1/2 hours. Serve with hot rice.
